Vegan spicy thai peanut ramen
Easy, quick and tasty
cooking time: 30mins difficulty: easy serves: 4

INGREDIENTS:
- 2 tbsp of olive oil
- 1 large onion chopped
- 4 cloves of garlic minced
- 2 tbsp of minced ginger
- 1 cayenne pepper
- 1 chili minced
- 2 cups of mushrooms
- 1 head of broccoli
- 3 cups of vegetable broth
- 1 can of coconut milk
- 1 cup of spinach
- juice of a lime
- salt and pepper
- 1 tsp of curry powder
- 250 g of noodles
- 2 spring onions
For the sauce:
- 1 cup of vegetable broth
- 1/2 cup of peanut butter
- 2 tbsp of soy sauce
- 2 tbsp of maple syrup
- juice of 1/2 a lime
INSTRUCTIONS:
1. In a bowl mix the ingredients for the sauce and set aside.
2. Add the oil to a pan and fry the garlic, ginger, onion, cayenne pepper and chili together. Fry until fragrant.
3. Add the mushrooms and the broccoli and cook for about 5 minutes.
4. Add the curry powder, the broth and the coconut milk in the pan and let it simmer.
5. Add the sauce and the spinach to the pan and bring it to a simmer
6. Add the noodles and let them cook until they are tender.
7. Add the lime juice and spring onions before serving.
NOTES:
This dish is best served immediately.
