Rich black bean soup
Rich, deep in flavour and nutritious
cooking time: 30mins difficulty: easy serves: 4

INGREDIENTS:
1 tbsp of oil (or water if avoiding oil)
1 cup diced white or yellow onion
3 cloves garlic, minced
2 cans of black beans, drained
2 cups vegetable broth
2 tsp of ground cumin
1 ½ tsp chili powder
1/4 tsp parsley or coriander
3 tbsp of cacao powder
Salt and pepper to taste
INSTRUCTIONS:
1. Heat a large pot over medium heat. Once hot, add oil (or water), onion, and garlic. Season with a pinch each salt and pepper and sauté for 4-5 minutes.
2. Add black beans, vegetable broth, cumin, chili powder, coriander or parsley and cocoa powder.
3. Bring back to a simmer over medium heat, then reduce heat to low and cook uncovered for about 15-20 minutes (the longer it simmers, the more the flavors develop).
4. Taste and adjust flavor as needed.
NOTES:
Enjoy as is, or pair with cooked grains such as rice or quinoa. Topping options include fresh lime, avocado or guacamole, coriander, red onion, hot sauce or japaleños.
