Quick, easy and comforting
Cooking time: 20 mins difficulty: easy serves: 4
1 onion, diced
2 cloves of garlic
1 red pepper, diced
6 mushrooms, sliced
1-2 cups of pasta sauce
250 g of whole grain pasta (or any pasta of your choice)
1 tsp of oregano
Salt and pepper to taste
1. Cook the pasta according to the package instructions.
2. Heat a pot over medium heat. Once hot, add a little bit of oil or a splash of water (if avoiding oil). Then add the onions, garlic and red pepper and sauté for 5 minutes.
3. Add the mushrooms and cook for 5 more minutes. Then, add the pasta sauce and the oregano and mix until well combined. Cook for 10 minutes.
4. Mix the pasta with the sauce, top with some vegan cheese (optional) and enjoy.
You can always change up the ingredients and use up anything you have in the fridge (green peppers or courgettes would work also really good).
Instead of using pasta choice (quickest way) you can always use chopped tomatoes.
Nutritional yeast on the top would give the dish a nice cheesy flavor.
