One pot lentil dal
Quick, healthy and authentic
cooking time: 30mins difficulty: easy serves: 3-4

INGREDIENTS:
1 large yellow onion, chopped
4 cloves garlic, minced
1 tbsp minced ginger
1 tsp ground cumin
1 tsp ground turmeric
1 tbsp curry powder
1 tsp garam masala
¼ tsp cayenne
1½ cups of red lentils
3 cups of vegetable broth
½ tsp salt
1 tomato can
INTRUCTIONS:
1. On a pan with a splash of water (or olive oil) add the onions and cook until translucent.
2. Stir in the garlic, ginger, cumin, turmeric, curry powder, garam masala and cayenne pepper and cook for another minute.
3. Add the lentils, salt, vegetable broth, and the tomato can and mix to combine.
4. Cook for 20 minutes or until the lentils are soft.
NOTES:
This recipe is delicious on rice or quinoa.
If you like spicy Indian food, I recommend you to add a bit more of cayenne powder.
You could also add coriander or parsley to garnish (I am just a coriander hater).
