One pot asian pasta

Creamy, easy and perfect for busy days

Cooking time: 30mins Difficulty: easy Serves: 2


INGREDIENTS:

1 onion, chopped

2 cloves of garlic, minced

1 courgette, chopped

1 red bell pepper, chopped

4 and ½ cups of whole wheat pasta, or any pasta of your choice

1 1/2 tsp red curry paste

3 cups diced tomatoes

1 cup of coconut milk

1/2 cup frozen peas

Salt and pepper to taste

2 spring onions

Lemon juice to taste

INSTRUCTIONS:

1. Add a splash of water  in a large pot and sauté the onion for about 2-3 minutes. Then add the garlic, the courgette and the red bell pepper and cook for 2 more minutes.

2. Add the remaining ingredients and mix well. Cook for about 15 minutes. Season with salt, black pepper and lemon juice.


NOTES:         

Add other vegetables of your choice.
