Flavourful and healthy

1 onion, diced
2 cloves of garlic, minced
4 carrots, diced
4 stalks of celery, diced
3 potatoes, chopped
4 cups of vegetable broth
2 springs of fresh rosemary
2 springs of fresh thyme
Salt and pepper to taste
1. Heat a large pot over medium heat. Once hot, add a little bit of oil (or a splash of water if avoiding oil), onion, garlic, carrots and celery with a bit of salt and pepper and stir.
2. Sauté for 5 minutes or until tender and slightly brown. Then, add the potatoes and cook for 2 more minutes.
3. Add the vegetable broth, rosemary and thyme and bring it to a gentle simmer. Then, add the lentils and stir. Cook for 20 minutes or until the lentils and potatoes are cooked.
4. Adjust the seasoning and serve.
Sweet potatoes would work also really well.
