Minestrone

One-pot bowl of goodness

cooking time: 50mins difficulty: easy serves: 4



INGREDIENTS:

1/2 cup of chopped onion

4 cloves garlic, minced

1/2 cup of chopped celery

3/4 cup of chopped carrots

1 can of tinned tomatoes

1 can of cannellini beans

1 cup of chopped zucchini

3 cups of water

1/2 tsp of salt

1/2 tsp of  oregano

1/4 tsp of  thyme

1/4 tsp of black pepper

1/2 cup of pasta


INSTRUCTIONS:

1. Heat oil (or a splash of water)  in a large saucepan over medium heat. Add onion and garlic and cook until translucent.

2. Add celery, carrots and tomato and bring to a boil.

3. Add the beans, zucchini, water, salt and spices and cook for 20 minutes.

4. Add the pasta and simmer for 12 or more minutes.


NOTES:

Add some fresh basil on the top for extra flavour.
