1 can of cannellini beans
1 yellow pepper, diced
1 red pepper, diced
1 red onion, finely diced
1 Spanish cucumber, diced
1 cup of cherry tomatoes, halved
1 cup of finely chopped fresh parsley
1 tbsp of olive oil (optional)
2 tbsp of red wine vinegar
Salt and pepper to taste
1. Put all the ingredients in a mixing bowl, add the oilive oil and vinegar and mix together.
2. Adjust the seasoning as you prefer and it’s ready to eat!
This recipe is really versatile, you could switch up the beans for chickpeas and add other vegetables.
The sauce could also include some Dijon mustard or tahini and would be also really good.
