Healthy and satisfying

1 onion, diced
3 cloves of garlic, minced
1 tbsp of grated ginger
1 block of firm tofu
¼ tsp of turmeric powder
1 cup of broccoli, chopped
1 red pepper, diced
1 carrot, sliced
½ cup of green peas
1 ½ tbsp. of soy sauce
2 cups of cooked rice (I used long brown rice)
Salt and pepper to taste
1. In a large heated pan add a bit of oil (or a splash of water if avoiding oil). Then, add the onions, garlic and ginger. Cook until the onions are translucent.
2. Then, add the tofu, scrambling it and cook for 5 more minutes. Add the turmeric and mix everything well.
3. Add the vegetables and the soy sauce and cook for 10 minutes adding splashes of water of necessary.
3. Top with some extra parsley and freshly cracked pepper.
Some sesame oil at the end can give the dishes a really nice flavor.
