Blueberry muffins
The perfect healthy snack

INGREDIENTS:
2 cups of whole wheat flour
1 tsp of baking soda
2 tsp of baking powder
Pinch of salt
1 tsp of cinnamon
½ cup of maple syrup
1 cup of non-dairy milk
3 tbsp of peanut butter
2 tsp of vanilla extract
2 banana, mashed
1 cup of frozen blueberries
INSTRUCTIONS:
1. Pre-heat oven to 170ºC.
2. Sift together the flour, baking soda, baking powder, salt, and cinnamon.
3. Stir in the milk, peanut nut butter, maple syrup, vanilla extract, and mashed banana. Stir until well combined and then gently fold in the blueberries.
4. Evenly spoon the mixture into a silicone muffin case.
5. Bake in oven for 25 minutes or until golden brown and a toothpick inserted in comes out clean.
NOTES:
You can use any milk of your choice.
Almond butter works really well with this recipe also.
