Sweet, savoury and perfect for the whole family

1 onion, diced
4 cloves of garlic, minced
1 red pepper, diced
1 green pepper, diced
1 carrot, diced
1 block of firm tofu
2 tbsp of corn flour
1 tsp garlic powder
3/4 tsp of onion powder
1 tsp parsley
1/2 tsp of oregano
1/2 tsp of cumin
1 tbsp of smoked paprika
½ cup of vegan BBQ sauce
Salt and pepper to taste
1. Preheat the oven at 200ºC.
2. Cut the tofu into cubes and add them a mixing bowl. Then add the flour and all the spices and stir well to combine. Place the tofu on a baking tray and season with salt and pepper. Bake for 20 minutes or until the tofu is crispy on the outside.
3 While the tofu is baking, heat a pot over medium heat. Once hot, add a little bit of oil or a splash of water (if avoiding oil). Then, add the onion and garlic and cook until golden brown.
4. Add the peppers and carrot and cook, adding splashes of water to avoid sticking if needed. Season well and add the BBQ sauce. Stir well to combine.
5. When the tofu is cooked, add it to the vegetables and add more BBQ sauce if needed.
Serve with rice or quinoa or even with some pasta.
Garnish with parsley and cayenne pepper.
