BBQ baked beans

Hearty, comforting and delicious

cooking time: 20mins difficulty: easy serves: 4


INGREDIENTS:

2 cans of beans (pinto beans are my favorite for this recipe)

1 tbsp of olive oil (skip it if avoiding oil)

1 1/2 cups chopped white or yellow onion

1 small red bell pepper, chopped

2 cups vegetable broth

2 tbsp of mustard

1/2 cup tomato puree

1/3 cup coconut sugar

1 tbsp of chili powder

1 tsp of liquid smoke

Salt and pepper to taste

INSTRUCTIONS:

1. Heat your large pot over medium heat. Once hot, add oil (or water), diced onion, and bell pepper. Sauté for 3-4 minutes, stirring frequently, or until onion is soft and translucent.

2. Next, add drained beams, vegetable broth, mustard, tomato paste, coconut sugar, salt, pepper and chili powder. Cook on low for 15 minutes, allowing the flavors to meld.  

3. Taste and adjust seasonings as needed

NOTES:         

Enjoy them on a baked potato or on toast with some avocado.
